Vegan Chocolate Chip Cookies
The best vegan, sugarfree, healthy chocolate chip cookies that I’ve ever made are these. They’re super easy, you just need a bowl and a spoon to make the batter and 20 minutes of your time. If you ever wake up a little earlier, make these while the rest of your household is still asleep (or just or yourself) and enjoy them while still warm with a glass of milk or a cup of coffee! Now that sounds like a plan, doesn’t it?

- 35 g nut butter I used peanut butter
- 30 g coconut sugar
- 60 g spelt flour
- 1/2 tsp. baking powder
- 1/2 tbsp. coconut oil
- 25 ml oat milk or other plant-based milk-alternative
- 40 g dark chocolate
- 15 g hazelnuts
Preheat the oven to 180 °C.
Put all the ingredients except chocolate and hazelnuts in a bowl and mix everything.
Roughly chop hazelnuts and chocolate. Add them to the batter and knead them into it with your hands.
Divide the batter into 6 equal pieces. Roll them into balls and slightly flatten them with your hands.
Put the cookie dough on baking tray and bake for 15 minutes at 180 °C. Done!
