Vegan Chocolate Chip Cookies

The best vegan, sugarfree, healthy chocolate chip cookies that I’ve ever made are these. They’re super easy, you just need a bowl and a spoon to make the batter and 20 minutes of your time. If you ever wake up a little earlier, make these while the rest of your household is still asleep (or just or yourself) and enjoy them while still warm with a glass of milk or a cup of coffee! Now that sounds like a plan, doesn’t it?

Zutaten
  

  • 35 g nut butter I used peanut butter
  • 30 g coconut sugar
  • 60 g spelt flour
  • 1/2 tsp. baking powder
  • 1/2 tbsp. coconut oil
  • 25 ml oat milk or other plant-based milk-alternative
  • 40 g dark chocolate
  • 15 g hazelnuts

Zubereitung
 

  • Preheat the oven to 180 °C.
  • Put all the ingredients except chocolate and hazelnuts in a bowl and mix everything. 
  • Roughly chop hazelnuts and chocolate. Add them to the batter and knead them into it with your hands.
  • Divide the batter into 6 equal pieces. Roll them into balls and slightly flatten them with your hands. 
  • Put the cookie dough on baking tray and bake for 15 minutes at 180 °C. Done!
