Southtyrol's famous "Spitzbuben" are simple sugar cookies filled with jam. One of my favorite kinds of Christmas Cookies ever! Here's my family's easy recipe.
Combine all of the ingredients (except the jam) to a smooth dough. Try to work as quickly as possible, the dough mustn’t get too warm. Let the dough rest in the fridge for at least 30 minutes or overnight.
Preheat the oven to 150 °C. Take some of the dough out of the fridge, roll it out and cut out the cookies. Cut the centers out of half of the cookies. Put the base-cookies on baking paper, spread some jam on top and cover them with the remaining tops (with the hole in the middle). Bake the cookies for 8-10 minutes.
If you want to, you can add some more jam after baking – this way the cookies won’t dry out.
