Blend all of the ingredients except prawns, coconut oil and coriander. This should be a super-creamy, spicy and fragrant sauce. Season with salt and pepper.
Fry the prawns in a little bit of coconut oil just to give them a nice flavor and color. Add the red curry sauce and let it simmer for 15 minutes. Season with some more salt or soy sauce if you need to. Serve with basmati rice or naan bread and some fresh coriander on top and enjoy!
